The idea is that you don't have to just wait in one place for an incoming attack when fighting with the hidden blade, but you can make it a dynamic and eventful fight by mixing in counter dodge, grab and throw, taunt, wall jumps, exiting fight and entering fight.
Also, the counters discourage the guards from attacking, but a grab and throw seems to restore their eagerness.
