In the Assassination contract, Hunting the Hunter, a bounty hunter put a decoy in order to bring Ezio to a trap.

If you use the Eagle Vision from afar or from the haystack, the dummy appears as Gold(A target), as soon you come close, it turns to red and the dummy falls, and the trap begins.

My question is: How the Bounty Hunter manage to fool the Eagle Vision? It don't make sense, plot wise, someone being able to do that! Even if he, by some miracle, manages to fool Ezio Eagle Vision, how he fools the Animus as well!?

I think Ubisoft was thinking more of fooling the player rather than making sense in that section.

I've heard fans justify Eagle Vision plot holes (such as Al Mualim appearing blue until the end) by saying it enhances the Assassin's intuitions about people and intuitions can be wrong. I try not to think too hard about it.

You won't even feel the blade.

Yeah, but the decoy is not even alive! XD

Ok, ok, I will stop being nitpicky. Joey is right, probably.

But I like also Stab talking about the Eagle Vision being a enchanted perception tool than something that pinpoint the right from wrong.

Because if was that, then Giovanni would know about the betrayal before it happened.

This. The information stolen from the first guard was wrong, after all, but it seemed very likely.
