So I just moved into my college dorm room today and was able to get the wifi working and a cable to hook up with my laptop and 360. Is there any software I can download in order to record gameplay from my xbox?
It's not so much about the software as it is the hardware. If your laptop has video capture hardware built in, it would have come with the software you need to do the recording. Then you just use something else to do the actual video editing after you're done recording. I use Windows Movie Maker but there are plenty of options out there.

No, Windows Movie Maker is for editing, not recording. You need the software that came with your capture hardware in order to do the recording.
Now chances are that you do not have capture hardware. You would usually know if you did. Computers never tend to come pre-equipped with capture hardware. Especially laptops. In fact, I'm not aware of any internal capture hardware even being available for laptops. Usually laptops will use an external device which you would have purchased separately.

Oh my bad. haha. No, I don't have capture hardware. This is a pretty low-grade laptop. I guess I'll either look for recording hardware or just get a camcorder.

I just use a external pinnacle dazzle capture card and some rca splitters so I can watch from my tv. Google it and some forums will probably have some info on how to use it properly. I have a laptop that I use and I just slip it into the usb and open pinnacle studios! You can Even record in wide screen even if you have a standard tv with the right settings.

Hmm... I'm not much of a stylish Assassin... more of a machinimator... but if I find out something new or some crazy glitch I'll be sure to put it up.
