In the book, Ezio walks out of the vault to find that Borgia had poisoned himself. He wouldn't die right away, but he was basically written off at this point. I think it was already clear from the fact that Borgia's entire goal was to open the vault and he failed anyway. He wasn't really a threat anymore.
However, the Templars as a group were still very much a threat (and still are right up until modern day). Plenty of reason for Ezio and the other Assassin's to have reason to attack them.

Seriously, you didn't know about the book? It's been mentioned in several different threads on this very site.
It's basically just the events of Ezio's life that we see in AC2, with the occasional segment fleshed out a bit. It's written in a way where you can tell that the author is trying to be wordy or even poetic, but the styles he chooses are cheesy and cliché more often than not. It gets a little annoying sometimes when you wish he'd just get to the damn point already.
Reading the book was most beneficial before the two DLC packs came out, because the book covered those events. Now that they're out, the book adds very little that wasn't in the game. Just small events, like the fact that Ezio stole the bodies of his father and brothers to bury them. Stuff like that.
The book comes out in North America later this month (I believe). But it's been available in the UK since December. It was cheap, so I imported it.
A few things to add regarding the book:
I feel the same way as FLAE but worse.Why?,because it has been out since december over here.
...There's a book... You'd think they'd hype it more than... practically nothing.
