Unlike most folks here, AC3 was my first game in the series. Also unlike many AC fans, I thoroughly enjoyed it...so much so that I decided to buy all the prior entries in the series and play them all, uninterrupted and in order.
I just finished the first game and I thoroughly enjoyed it. I finally understand who Desmond is and what the main plotline is all about. I understand the challenge of trying to pull off the perfect assassination and I feel the frustration of being used by a higher authority. The game leaves you with a lot of emotions, but the emotions are all central to the story itself, not the play design. I consider AC to be a timeless classic and it is a game that is widely misunderstood and under appreciated.
Next up, AC2. I have the Ezio Trilogy and I look forward to venturing through Renaissance Italy to exact justice. That said, I'm going to miss Altair. *sheds tear*
I'm glad to say I started with AC1, and Altair is my favorite assassin and game character because of it. But because of the way the series has gone I don't even want to play AC4 that much. Lucky for you AC3 was good enough to keep your interest; it wasn't a bad game, just not "AC good".

Yes, you're right. I think it's because AC1 was an original concept. They didn't have any consumer research data points to measure the game features to. AC1 was made for people who would pay attention to the game. It's a nicely rounded game. The sequels are just large heaps of features, in my opinion.
But ACII is also a favorite of many people.
