Isn't it supposed to be gray? You did say on the last memory block, which is when you're supposed to kill all the zombie guards, and the life and color of the world is absorbed by the Piece of Eden, which Al Mualim controls. Is that not what normally happens?
I think he means its turning grey in other MBs when he's killing a lot of guards.
Usually it takes all the stationery guards.

The closest thing I've experienced is a momentary (approximately one second) total loss of color. It's always when doing a big action such as assassinating a Templar - just the sort of thing I want to look good for my videos. Ian has confirmed that the same thing happens on PS3.
For an example, see the very first Templar in this video. The whole assassination close-up animation is in black and white.

Actually I had this alot, I thought it was a glitch at first but thinking about it, I think it's more like Altair/Desmond is experiencing adrenaline.

The last Memory Block is the one where you retrieve the Apple of Eden from the final boss. When you kill a bunch of guards, it's supposed to turn all grey. Then a new wave of guards comes, and then Malik's men save you. Then you go and kick some ass.
