Also, when in possition for a low profile ledge-assassinate if you hold right trigger, you'll get a different animation (not the one you showed in the video.)
i'm having trouble with throw down and stab. every time i try he just decides to kick the guy instead
You shouldn't unlock between the throw and the kill. To get to your victim, strafe towards him by pressing Cross or A while still locked to him.
Should've made that clearer, I guess 
Edit: @Giga, I was having trouble finding situations where I could easily get in range for low profile hiding spot assassinations (and non-jump high profile assassinations), since seekers are very rare, and few guards stand directly next to a hiding spot. That's why I had to use E3 footage for the low profile hiding spot assassination.
