Although, they are facing the wrong way, so you can't see them during the horse carriage chase, only when exploring as Ezio (free-roam mode).

Replay sequence 8 memory 3 COMPLETELY (50% or 100% sync doesn't matter)
When you have completed the memory (I haven't tried skipping any cutscenes, so it may not work if you skip them), and are in the memory corridor (blue/black infinite area AKA loading screen), wait for the little black and white square (save icon) in the bottom right to finish spinning. Then turn off your console or quit the game (i recommend that you press Alt+F4 (on a PC), for good timing).
When you restart the game your save file should say "AHMET CHASE" and when you load it you will appear at the start point of the chase, but in free-roam mode.

'Course matey!
(1. Make sure you have parachutes)
2. Replay a Masyaf memory.
3. Finish the mission
4. When you see Ezio in the loading screen, and the save icon has dissappeared, either turn off your console (X360, PS3) or close the game by Alt+F4 (PC)
5. When you restart the game you should be in Masyaf (free-roam).
After this, there are two ways.
6.1. Climb to the top of the central building like you did in the first mission of the game, and parachute off it towards the "leap-of-faith-planks".
