Well I've always liked it way before Revelations was ever announced so doesn't change me liking it... >:P
Roman Guilded Onyx because it's the closest to Altair's Armor while also including gold. Its also probably the least suspicious of all these color schemes with the possible exception of Wetlands Ebony.
From AC2 onwards, Ezio can buy weapons and store them in his armory. I think they should include something like you can buy all the dyes and store them in the closet. That means Ezio can change his dye whenever he like. Not just 1 dye fit all.

Well dye's are kinda hard to store... xD
It could work if he gets a personal Tailor at his base, though that kinda seems a bit over the top... 8P
I mean you can swap cloth with different dye in your closet. But yeah, it's over-customized.
