Assassin's Creed has always had a strange relationship with its movement mechanics. Either they're complex enough for those craving depth to enjoy, but obtuse and frustrating to learn for newcomers, or they're simple and controllable for all players, but without much of a potential cap or skill ceiling to reach for when you get bored of the basics.
One solution is to have a combination of the two by allowing everyone to have fluid movement on a basic level, but also teaching advanced techniques through the Animus. As these moves would not be "locked" but just unearthed as existing abilities your Assassin had all along, this would make extra playthroughs smoother and provide additional feelings of spontaneous discovery over the course of a first experience with the game.
